● 1 cup GABA rice (germinated brown rice)

1. In a medium saucepan, heat the broth over medium heat. Keep it warm on a low simmer.

2. In a large pan, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 5 minutes.

3. Add the sliced mushrooms to the pan. Cook until they release their moisture and become golden brown, about 5-7 minutes.

4. Add the GABA rice to the pan with the vegetables. Stir well to coat the rice with the oil and butter. Toast the rice for 2-3 minutes, stirring constantly.

5. Begin adding the warm broth to the rice, one ladle at a time. Stir frequently and allow each addition of broth to be absorbed before adding more. Continue this process until the rice is tender and creamy, about 35-40 minutes. You may not need to use all the broth.

6. When the rice is almost done, stir in the chopped spinach. Cook until the spinach is wilted. Remove the pan from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

7. Spoon the risotto into bowls and garnish with fresh parsley. Serve immediately.
