Millets have umpteen health benefits. Knowing this, i am on a constant look out for new Millet recipes to share with you. This recipe is inspiration from my favourite cook, my mom, a pro at cooking some fine rice recipes. Her suggestion, to try coconut with Millet came in handy. Along with this you can serve a yummy chickpea curry, a traditional dish made in Northern parts of Karnataka. This is one of the favourite dishes savoured by my friends. So here we go…

Coconut Millet Rice Recipe

Ingredients

1 Cup Foxtail Millet (click to buy) .
1/2 Cup Rice
1/4 cup whole black chickpea (Optional)
4 Organic Cloves
1/2 inch Organic Cinammon Stick
4 Organic cardomon seeds
1/2 teaspoon Organic Turmeric
1 teaspoon Shahi Jeera
5 crushed garlic cloves
1/2 cup grated dry coconut
1 tablespoon Organic ghee/ Groundnut Oil
1 1/2 cup water for cooking the rice
Salt to taste

Directions

Soak the chickpea overnight & pressure cook it
Wash Soak Rice and Millet and keep it aside for 15 minutes.
Make a coarse powder of all the spices mentioned above and keep it aside.

Heat the ghee/oil in a pressure cooker. Add crushed garlic and saute until garlic turns light brown. Add ground spices powder, shahi jeera and grated coconut. Saute for few minutes until coconut turns brown. Add the rice, millet, chickpea, salt & saute for few minutes. Add water and cook the rice in pressure cooker. Alternatively, you can cook the rice by bringing it to boil.

Chickpea Curry Recipe

Ingredients

2 table spoon Organic Sprouted Chickpea Flour (click to buy)
1/2 cup whole chickpea (optional)
1/2 bunch Coriander leaves
2-3 green chilli
1 teaspoon jeera
2-3 garlic cloves
1/2 table spoon Turmeric
1 cup chopped onions
1 teaspoon oil
1 cup water

Directions

Soak the chickpea overnight and pressure cook it.

Grind green chilli, jeera, garlic and coriander to make a paste and keep it aside.

Heat the oil in the pan, add onion, salt and turmeric. Saute it until golden brown. Add the ground paste and saute it for few minutes. Add water and bring it to boil. Slowly add chickpea flour and stir it gently to ensure no lumps are formed. Add cooked whole chickpea and cover the pan and let it cook for 5 minutes.

Chickpea curry is ready.
