Inspired by an amazing recipe developer (discovered her in my neighbourhood), I made these Emmer flour ladoos with organic almonds and walnut this Diwali. An instant hit among my family and friends.

3 glasses of Wheat Emmer flour (750 GM)

2.5 – 3 glasses of Sugar (750 GM)

3 glasses of Almond (500 GM) powdered (Walnuts are optional)

Handful of Raisins

Dry Ginger powder

Chaar-Magaj (Dried watermelon, melon, pumpkin seeds and almond kernels)

Ghee 500 GM

Gond (Edible gum) – 100 GM

Take two tbsp ghee in a thick bottomed pan and start heating it. Then add gond (edible gum) to it and stir fry till the colour changes to white. Cool and crush the gond with your hand and keep aside.

In a pan, take Emmer Wheat, stir to dry fry on slow heat until it turns fragrant and pink. Add ghee and stir till it turns pinkish brown. Now add sugar, mix and then turn off the flame 🔥. Finally, add gond, almond powder, raisins and dry ginger powder, likewise, mix the Chaar-magaj. Shape the mixture into round balls and keep it in an airtight container.
