• 1 cup organic mota white poha
  • 1/4 cup water
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 bunch palak. finely chopped
  • 1/2 cup freshly grated coconut or organic desiccated coconut
  • 1-2 green chili, finely chopped or slit
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp white gram
  • 2 tsp chana dal
  • 1 tsp turmeric powder
  • 1 tsp sesame powder
  • 2 tsp groundnut oil
  • Pink salt to taste

In a pan, heat the oil. Add mustard, cumin seed, white gram (urad), and chana dal. Let it splatter until brown.

Add onion and salt and let it cook until brown. Add chilies. Sauté for few mins. Add tomatoes and sauté until tomato is soft.

Add finely chopped palak. Let it cook for about 5 minutes.

Once it’s well cooked, add 1/4 cup water and let it come to a boil.

In a separate bowl, wash the poha. Add it immediately to the boiling mix. Once it’s half cooked, add freshly grated coconut or organic desiccated coconut and mix well. Cover the pan with a lid and let it cook in simmer for about 10 minutes.

Garnish with cilantro and a dollop of cow ghee or A2 ghee. Serve hot or cold. It tastes delicious.

You can add a little lemon on the side if you like it tangy.
