● 200g Millet noodles

● 4 cups water

● 1 tbsp salt

● 1 tbsp oil (for boiling noodles)

● 1 tbsp oil (for stir-frying)

● 1 tbsp cumin seeds

● 1 tbsp grated ginger

● 2 cloves garlic, minced

● 1 onion, sliced

● 1 carrot, julienned

● 1/4 cabbage, shredded

● 1 capsicum (bell pepper), diced

● 2 tbsp soy sauce

● 1 tbsp vinegar

● 1 tbsp sugar

● 1/4 tsp black pepper

● 2 tbsp chopped coriander leaves


1. Boil 4 cups of water with 1 tbsp salt. Add 200g millet noodles and cook for about 10 minutes or until tender.

2. Drain and rinse with cold water to stop the cooking process and set aside​

3. Heat 1 tbsp oil in a skillet over medium-high heat. Add 1 tbsp cumin seeds and let them sizzle.

4. Add 1 tbsp grated ginger and 2 minced garlic cloves, sauté for a minute until fragrant.

5. Add 1 sliced onion and cook until golden brown. Add the julienned carrot, shredded cabbage, and diced capsicum. Stir-fry for about 10 minutes until the vegetables are tender but still crisp​.

6. Add 2 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp sugar, and 1/4 tsp black pepper to the vegetables. Mix well.

7. Add the cooked millet noodles to the skillet. Toss everything together gently to combine well and ensure the noodles are heated through​.

8. Sprinkle 2 tbsp chopped coriander leaves on top.

9. Serve the noodles hot. Optionally, you can garnish with roasted peanuts or serve with a side of tomato sauce​.

This millet noodle recipe is versatile, and you can add other vegetables like broccoli, mushrooms, or zucchini. For added protein, consider including tofu or paneer​.
