What to eat on Ekadashi? PART 3
3. Organic Sprouted Peanut Butter with pomegranate
Ingredients
1 cup organic sprouted peanut butter
1 medium-sized pomegranate
Honey or maple syrup (optional, for added sweetness)
Method
Cut the pomegranate into halves.
Hold one half over a bowl, cut side down.
Use a wooden spoon or your fingers to gently tap the back of the pomegranate half. This will release the seeds into the bowl.
Repeat with the other half until you have extracted all the seeds. Discard the peel.
In a mixing bowl, add the organic sprouted peanut butter.
Gently fold in the pomegranate seeds. Be careful not to crush the seeds too much; you want them to retain their texture and flavor.
Once everything is mixed well, transfer the peanut butter and pomegranate mixture into a clean serving bowl.
You can serve it immediately with bread, crackers, or fruits like apple slices or banana, depending on your dietary preferences.
Enjoy your nutritious and delicious Organic Sprouted Peanut Butter with Pomegranate!
Optional Sweetener: If desired, drizzle some honey or maple syrup over the peanut butter and pomegranate mixture. This step is optional and depends on your preference for sweetness.
