HOW TO USE IT

It is harvested entirely young, which is why it is small, pale yellow, and completely edible including the cob - unlike regular mature corn where the cob is too tough and fibrous to eat. The flavour is mild, slightly sweet, and more delicate than mature corn. The texture holds up well to heat and absorbs surrounding flavours readily, making it ideal for stir-fries, soups, curries, and salads in both Asian and Middle Eastern cooking. Unlike canned baby corn, fresh baby corn has a noticeably crisper texture and cleaner flavour without the brine aftertaste.
Baby corn cooks quickly and needs almost no preparation. Rinse under cold water. You can leave whole, halve lengthwise, or cut into rounds depending on your dish. There is no need to remove the leaves or silk if using fresh whole ears - they are edible and add a mild sweetness. Stir-fry: heat oil (cold-pressed groundnut or coconut oil works well) in a wok or pan on high heat. Add garlic, ginger, and baby corn. Stir-fry 3 to 4 minutes until just tender with a slight char. Season with soy sauce, oyster sauce or a pinch of salt. Soup: add whole or halved baby corn in the last 5 minutes of simmering - it does not need long cooking. Salad: blanch in boiling water for 2 minutes, plunge into cold water, slice and toss with dressing. Holds its crunch beautifully. Curry: add halved baby corn to any dal, coconut milk curry, or vegetable preparation in the last 8 to 10 minutes.
