Ingredients
- 1 cup organic horsegram (soaked overnight)
- 1 cup spinach (chopped) • 1 cup fresh grated coconut
- 1 tbsp organic sambar powder (divided: ½ tbsp for paste, ½ tbsp for curry)
- 1 tbsp organic rice powder (optional – for better binding in the paste)
- Small piece of organic tamarind (soaked in warm water)
- Himalayan pink rock salt to taste
- 1 tbsp A2 ghee
- A pinch of hing (asafoetida)
Method
1. Prepare the Horsegram
• Soak 1 cup of organic horsegram overnight in plenty of water.
• Drain and pressure cook with fresh water until soft (about 4–5 whistles). Set aside.
2. Make the Coconut Masala Paste
- In a mixer grinder, blend:
- 1 cup fresh coconut
- ½ tbsp organic sambar powder
- 1 tbsp organic rice powder (optional)
- A little water to help blend
- Grind into a smooth, fine paste .
3. Sauté the Spinach
- In a pan, heat 1 tbsp A2 ghee.
- Add chopped spinach and sauté gently for 2–3 minutes until wilted but still bright green.
4. Combine Horsegram & Spinach
- Add the cooked horsegram (with its water) to the sautéed spinach.
- Add ½ tbsp sambar powder and salt to taste.
- Let this mixture simmer for 5 minutes.
5. Add Coconut Paste
- Add the ground coconut paste to the curry.
- Add soaked tamarind pulp (about 2 tbsp or to taste).
- Mix thoroughly and bring to a boil.
6. Cook the Curry
- Let the curry boil gently for 10–15 minutes , stirring occasionally, until the raw coconut smell disappears and the flavors are well blended.
7. Temper the Curry
- In a small pan, heat a spoon of A2 ghee.
- Add a pinch of hing (asafoetida) and allow it to bloom.
- Pour this tempering into the curry just before serving.
