Country :SPAIN There is a reason a perfectly ripe peach is the universal metaphor for summer. That soft give under your thumb. The rush of juice. The floral sweetness that fills the room before you even bite in. Across South Asian kitchens it is آڑو — a short season celebrated, a crate bought at the market, a fruit eaten standing over the sink. In Arab households it is الخوخ — offered to guests, sliced into fruit platters, the fragrance a signal of the season changing.

  • Skin from the inside: The antioxidant polyphenols in peach skin — lutein, zeaxanthin, beta-cryptoxanthin — protect skin cells from oxidative damage

The skin rule:

Always eat organic peaches with the skin on. The skin contains a higher concentration of antioxidants than the flesh. One study found that peach peel delivers the highest levels of anticancer phytochemicals of any part of the fruit. This benefit is only achievable with confidence on an organically grown peach.

How to enjoy them:

  • Eat whole as a snack — skin on, juice running down your wrist, no apology needed
  • Slice over labneh or Greek yogurt with a drizzle of honey and crushed pistachios
  • Halve, remove stone, brush with a little cold-pressed oil and grill 3–4 minutes per side
  • Blend into a lassi with A2 yogurt, a pinch of cardamom, and raw honey
  • Slice into a salad with rocket, shaved fennel, goat cheese, and balsamic
  • Stew gently with a cinnamon stick and a little water — serve over oats or rice pudding
  • Freeze slices and blend into a clean granita or sorbet with nothing but honey

Ripeness guide:

Peaches may arrive firm to protect them in transit. Leave at room temperature for 1–2 days. They are ripe when they give gently under thumb pressure near the stem and smell sweet and floral. Do not refrigerate until ripe — cold storage stops ripening and diminishes both flavour and aroma.

Storage:

Once ripe, move to the fridge crisper and use within 3–4 days. If you have more than your family can eat, slice, remove the stone, and freeze. Frozen peach slices are excellent in smoothies, lassi, and compotes and keep for up to 3 months.

Common mistake:

Peeling the skin. On a conventional peach, this is understandable given the pesticide concern. On an organic peach, it wastes the most nutritionally rich part of the fruit. Eat the skin. That is the whole point.
