The most expensive seed in the Rootz range and the most nutritionally distinctive. Chilgoza pine seeds (Pinus gerardiana) are harvested from wild Himalayan forests. They are the only known significant food source of pinolenic acid ; a fatty acid unique to pine that stimulates CCK and GLP-1 satiety hormones, reducing food intake by up to 36% in studies. Vitamin E at 62% DV per 100g. Manganese at 383% DV ; the highest of any nut or seed.

THE PINOLENIC ACID ADVANTAGE

Pine seeds are the only known significant food source of pinolenic acid — a polyunsaturated fatty acid unique to the Pineaceae family. Clinical studies demonstrate that pinolenic acid stimulates the release of:

  • Cholecystokinin (CCK): the primary satiety hormone
  • Glucagon-like peptide-1 (GLP-1): the same hormone targeted by Ozempic-class drugs

One study: 3g of pine seed oil (~10–12 pine seeds) before a meal reduced food intake by 36% in overweight women.

VITAMIN E (62% DV per 100g):

Alpha-tocopherol, the most biologically active form of Vitamin E — a fat-soluble antioxidant protecting cell membranes from oxidative damage. Supports immune function, skin health, and reduces platelet aggregation.

MANGANESE (383% DV per 100g):

The highest manganese content of any nut or seed. Required for superoxide dismutase (SOD) — the body's primary cellular antioxidant enzyme. Also essential for bone formation, carbohydrate metabolism, and nerve function.

HEART HEALTH:

Oleic acid (same as olive oil) + ALA omega-3. Associated with LDL reduction, anti-inflammatory activity, and cardiovascular protection.

HOW TO USE:

  1. Levantine & Gulf cooking: the classic garnish for hummus, mujadara, kibbeh, sambousek and fatteh, and for spiced rice (machboos, kabsa); also used in stuffed dishes — hashweh, stuffed vine leaves and vegetables
  2. Arabic sweets: scatter over baklava, maamoul and semolina cakes
  3. Pesto: toast lightly (30 sec in a dry pan) before blending with basil, olive oil, garlic and Parmesan
  4. Salads & bowls: raw or toasted over any salad, grain bowl or roasted vegetables
  5. Direct snack: 10–15 seeds as an appetite-management pre-meal snack
