If you think you don't like cabbage, pointed cabbage may change your mind. Also known as hispi or sweetheart cabbage, this conical, loose-leaved variety is markedly sweeter and more tender than dense round cabbage, with a delicate flavour and none of the bitterness.

HOW TO SELECT & STORE
- Store: refrigerate whole in the crisper for up to 1 week.
- Once cut, wrap and use within 2-3 days.

Pointed cabbage is one of the most versatile vegetables in a UAE kitchen.
- Charred wedges (the chef's way): cut into wedges through the core, brush with oil, and roast or griddle until charred outside and sweet inside - finish with lemon, chilli or tahini.
- Stir-fry: shred and stir-fry fast with garlic and soy - tender in minutes.
- Slaw & salad: shred raw for a sweeter, more delicate slaw than round cabbage.
- Sauteed: ribbon and pan-fry with butter, cumin or mustard seeds as a quick side.
- Steamed: a gentle, mild side for any meal.
Pairs equally well with Mediterranean, South Asian and East-Asian flavours.
