QUERCETIN — THE ONION FLAVONOID
Quercetin is one of the most studied plant flavonoids, found in highest concentrations in onion skin and flesh. In onion powder, the quercetin concentration is approximately 20–30x higher than fresh onion (dehydration concentrates it).
Quercetin is:
- Potent antioxidant and anti-inflammatory
- Antihistamine: studied for hay fever and allergic response management
- Neuroprotective: crosses the blood-brain barrier
- Cardiovascular: supports blood pressure regulation
PREBIOTIC FOS (FRUCTOOLIGOSACCHARIDES):
Onions are one of the richest food sources of FOS — prebiotic fibres that selectively feed Bifidobacterium and Lactobacillus in the gut. These pass intact to the colon and feed beneficial bacteria.
ANTIMICROBIAL:
Organosulphur compounds (similar to garlic) support immune defence and oral health.
HOW TO USE:
- Middle Eastern blends: build into shawarma, baharat and kofta/kebab spice mixes, and Gulf rice seasonings
- Meat mixes: kofta, kebab, burger and meatball blends
- Everyday: dry rubs, marinades, dressings, dips, bread doughs, soup and stock bases
- Anywhere fresh onion would take too long to cook down
