Coconut Bread (Paratha) with Sprouted Wheat Flour

Ingredients

For the Dough

● 2 cups sprouted wheat flour

● 1/2 teaspoon salt

● Water (as needed)

● 1 tablespoon oil or ghee (for kneading)

● 1 cup grated fresh coconut

● 2 tablespoons jaggery (adjust to taste)

● 1/2 teaspoon cardamom powder

● A pinch of salt

● 1 tablespoon ghee (optional, for a richer flavor)

● Ghee or oil (for frying)

Instructions

1. In a large mixing bowl, add the sprouted wheat flour and salt. Mix well.

2. Gradually add water and knead the flour into a smooth, soft dough. Add the oil or ghee while kneading to make the dough more pliable.

3. Cover the dough with a damp cloth and let it rest for 20-30 minutes.

4. In a bowl, mix the grated coconut, jaggery, cardamom powder, and a pinch of salt. If you want a richer flavor, add the ghee and mix well. Ensure the jaggery is well incorporated with the coconut.

5. Divide the dough into equal-sized balls (about the size of a golf ball). Roll each ball into a small circle (about 4 inches in diameter) on a floured surface.

6. Place a spoonful of the coconut filling in the center of the rolled dough.

7. Gather the edges of the dough and bring them together to enclose the filling completely. Pinch off any excess dough at the top.

8. Flatten the filled dough gently with your fingers and then roll it out carefully into a circle (about 6-7 inches in diameter). Be gentle to avoid the filling from spilling out.

9. Heat a griddle or tawa over medium heat. Place the rolled paratha on the hot griddle. Cook for about 1-2 minutes until bubbles start to form on the surface.

10. Flip the paratha and apply a small amount of ghee or oil on the cooked side. Press gently with a spatula.

11. Flip again and apply ghee or oil on the other side. Cook until both sides are golden brown and crispy, pressing gently with the spatula to ensure even cooking.

12. Repeat the process with the remaining dough and filling.

13. Serve the coconut parathas hot with yogurt, pickle, or any side dish of your choice.
