Because Comfort Food Should Actually Comfort You

There is a version of pasta night that most of us grew up with — the one that tastes wonderful in the moment and leaves you feeling heavy, bloated, and vaguely regretful an hour later. Refined flour. Processed cheese. Heavy cream. A long list of ingredients you can't quite pronounce.

At Rootz Organics, we asked a simple question: what if we kept everything you love about white sauce pasta — the creaminess, the warmth, the soul-satisfying comfort — and rebuilt it from the ground up with real, clean, nourishing ingredients?

The answer is this recipe. And honestly? It is better than the original.


Why the Ingredients Matter

Most white sauce pasta recipes rely on a roux made from all-purpose flour (maida) — a refined, nutrient-stripped carbohydrate that spikes blood sugar and provides little else. The cream-based sauce often comes loaded with preservatives and additives. The result is a dish that tastes like indulgence but functions like burden.

We took a different approach. Here is what we swapped in, and why each choice matters:

  • Organic cashews + chickpeas + black chickpeas — soaked and blended into the sauce base, these provide plant-based protein, fibre, and a naturally creamy texture without a single gram of maida. Legumes also feed your gut microbiome, supporting digestion and long-term immunity.
  • A2 milk — sourced from indigenous Desi cow breeds, A2 milk contains only the A2 beta-casein protein, which is easier for the body to digest. For those who have felt that dairy doesn't agree with them, A2 is often a revelation.
  • Cold-pressed sesame oil — unlike refined cooking oils that are processed with heat and chemicals, our cold-pressed sesame oil retains its full spectrum of antioxidants, healthy fats, and natural flavour. It adds a subtle warmth to the vegetables without compromising nutritional integrity.
  • Farm-fresh organic rainbow vegetables — locally grown in UAE farms, these are harvested without synthetic pesticides, meaning more nutrition in every bite and less toxic load on your family's system.
  • Organic Italian spaghetti — whole grain or organic pasta provides more fibre and a lower glycaemic response than conventional white pasta, helping you feel fuller for longer.

The Full Recipe

Serves 3–4 | Prep time: 20 minutes (plus overnight soak) | Cook time: 25 minutes

What You Need

FOR THE SAUCE BASE

  • 1/2 cup organic cashews (soaked overnight)
  • 1/4 cup organic chickpeas (soaked overnight)
  • 1/4 cup organic black chickpeas (soaked overnight)
  • 2–3 cloves organic garlic
  • 1 cup Rootz A2 milk
  • Salt and white pepper to taste

FOR THE VEGETABLES

  • 2 cups farm-fresh organic rainbow vegetables (capsicum, zucchini, broccoli, cherry tomatoes, or whatever is seasonal)
  • 2 tbsp Rootz cold-pressed sesame oil
  • Salt to taste

TO FINISH

  • 250g organic Italian spaghetti
  • Freshly cracked black pepper
  • Red chilli flakes
  • Fresh herbs — basil, parsley, or oregano

Method



Step 1 — Soak & Prepare

The night before, soak your organic cashews, chickpeas, and black chickpeas in separate bowls of cold water. This is not an optional step — soaking breaks down the phytic acid in legumes and nuts, dramatically improving digestibility and nutrient absorption. By morning, they will be plump, tender, and ready to transform.

Step 2 — Build Your Creamy Base

Drain and rinse your soaked cashews and legumes. Add them to a blender along with the organic garlic cloves and A2 milk. Blend on high until the mixture is completely smooth and silky — this is your white sauce. No flour. No cream. No shortcuts. Taste and season lightly with salt and white pepper.

What you will notice immediately is that the sauce smells alive. There is a freshness and depth to it that packaged sauces simply cannot replicate. That is what real ingredients do.

Step 3 — Sauté the Vegetables

Heat your cold-pressed sesame oil in a wide pan over medium heat. Add your rainbow vegetables and sauté until they are tender but still hold their colour and texture — approximately 5 to 7 minutes. Season lightly. The goal is vegetables that still have integrity, not ones that have been cooked into submission.

Step 4 — Bring It Together

Pour your blended sauce over the sautéed vegetables. Reduce the heat and let everything simmer gently for 4 to 5 minutes, stirring occasionally. The sauce will thicken slightly and coat the vegetables in a way that feels genuinely luxurious.

Step 5 — Cook the Pasta

Meanwhile, bring a large pot of well-salted water to a boil and cook your organic spaghetti until al dente — firm to the bite, not soft. Drain and reserve a small cup of the pasta water before discarding the rest.

Step 6 — Fold & Finish

Add the cooked spaghetti directly into the pan with your sauce and vegetables. Toss gently to coat, adding a splash of reserved pasta water if needed to loosen the sauce to your preferred consistency. Finish generously with cracked black pepper, chilli flakes, and fresh herbs.
