What is psyllium, and why UAE households already half-know it

Psyllium comes from the seed husk of the Plantago ovata plant, a soluble fibre long used across South Asian kitchens under the name isabgol. With such a large South Asian community across Dubai, Abu Dhabi and Sharjah, many UAE households already have a jar of it somewhere — usually reached for occasionally, rather than used as part of everyday cooking.

Psyllium is available in two forms, and knowing the difference makes it far easier to use well.

Whole psyllium seeds

The intact seed, ideal for soaking. Soaked whole seeds develop a light gel-like texture and blend easily into breakfast bowls, smoothies and batters without changing the flavour of what they're added to.

Psyllium husk

The outer husk, separated and typically sold as a powder or flakes. This is the form most useful in the kitchen for baking — particularly in gluten-free breads, rotis and flatbreads, where it acts as a natural binder in place of gluten.

Fibre-rich foods support steady, comfortable digestion and help meals feel more satisfying for longer — which is part of why we pair psyllium with protein (curd, peanut butter) and good fats in our own bowl, rather than eating it on its own.   • Soaked whole psyllium seeds (soak 15–20 minutes, or overnight in the fridge)
  • Soaked chia seeds
  • Sliced banana
  • Fresh blueberries
  • A generous spoon of curd
  • A spoon of peanut butter

Layer everything in a bowl, starting with curd as the base. There's no fixed method here — the idea is simply to make sure fibre, protein and healthy fats show up together, and to let the colours and textures do the rest.

Easy everyday ways to bring psyllium into a UAE kitchen

  • Stir soaked whole seeds into a breakfast bowl or smoothie, the way we do above
  • Add a spoon of psyllium husk as a binder in gluten-free bread, roti or flatbread dough
  • Mix soaked seeds into overnight oats before refrigerating
  • Use psyllium husk in homemade energy bites to help them hold their shape
  • Whisk husk into pancake or dosa batter for a lighter, gluten-free texture
