Germinated brown rice, also known as GABA rice, is brown rice that has undergone a natural germination (sprouting) process. The short grains are soaked just enough to begin sprouting, which softens the grain and gives a milder, slightly sweet flavour and a fluffier texture than regular brown rice.

WHAT MAKES IT SPECIAL

GABA rice is softer and easier to cook than ordinary brown rice, while keeping the wholegrain bran that white rice loses. It is naturally gluten-free, and its name comes from the fact that germinated brown rice naturally contains gamma-aminobutyric acid (GABA), a compound found in the grain. It provides wholegrain fibre, plant protein and magnesium.

GABA rice cooks and serves like a softer brown rice, UAE and international.

  • How to cook: rinse well, soak for 10–15 minutes, then cook like brown rice (about 1 part rice to 2 parts water) until tender. Soaking gives a softer, fluffier result.
  • Everyday bowls: serve under curries, dals, stir-fries and grilled vegetables.
  • Pilafs & pulao: cook with aromatics and vegetables.
  • Salads & buddha bowls: cool and toss into grain salads.
  • Fried rice: use day-old cooked rice for a wholegrain fried rice.
  • Porridge & kheer: simmer soft for a wholesome porridge.
