Cooking Instructions – Beef Filet Mignon
Pan-Seared Filet Mignon
- Remove the steak from the refrigerator and let it rest at room temperature for 20–30 minutes.
- Pat dry and season generously with salt and freshly ground black pepper.
- Heat a heavy skillet over medium-high to high heat until very hot. Add a small amount of cooking oil.
- Place the filet mignon in the pan and sear for approximately 2–3 minutes per side until a golden-brown crust forms.
- Add butter, garlic and fresh herbs such as rosemary or thyme, if desired. Baste the steak for 1–2 minutes.
- For thicker cuts, transfer to a preheated 200°C oven and cook until your preferred doneness is reached.
- Remove from the heat and let the steak rest for 5–10 minutes before serving.
Recommended Internal Temperatures:
- Rare: 50–52°C
- Medium-rare: 54–57°C
- Medium: 60–63°C
- Medium-well: 65–68°C
