KABULI CHANA: THE CHICKPEA BEHIND HUMMUS
Chickpeas (Cicer arietinum) come in two distinct types: kabuli and desi. Kabuli chickpeas — the type in this product — are larger, rounder, and lighter beige in colour, and are the variety most commonly used in hummus, falafel, and Middle Eastern and Mediterranean cooking. Desi chickpeas are smaller, darker, and more angular, more commonly used across South Asia for chana dal and ground into besan (chickpea flour). Both are the same species, but the two types differ meaningfully in size, cooking time, and culinary use (comparative chickpea research, ScienceDirect/PMC).

PROTEIN, FIBRE, AND AN EXCEPTIONAL FOLATE CONTENT
Raw dried chickpeas provide approximately 20g of protein and 12g of dietary fibre per 100g (USDA FoodData Central). Once soaked and cooked — chickpeas roughly double in weight as they absorb water — that same 100g portion provides closer to 9g of protein, which is the figure most commonly quoted for cooked chickpeas. HOW TO USE
- Rinse thoroughly, then soak for 8–12 hours or overnight
- Drain and simmer in fresh water for 60–90 minutes, until tender
- Hummus: blend cooked chickpeas with tahini, lemon, garlic, and olive oil
- Chana masala: simmer cooked chickpeas in a tomato-onion masala with cumin, coriander, and garam masala
- Toss cooked, cooled chickpeas into a salad with olive oil, lemon, and herbs
STORAGE
Store in a cool, dry place in an airtight container, away from moisture and direct sunlight. Best used within 6–12 months of purchase.
